Recipe: Shangri-La Hotel, Vancouver's Olive Oil Brownies

If you’re craving something sweet and chocolatey, Shangri-La Hotel, Vancouver has shared its recipe for Olive Oil Brownies—a rich and fudgy sweet treat loaded with flavor and moistness.

Swapping olive oil into your brownies not only adds an unexpected flavor, but it’s also a healthier alternative to butter. What’s more, these deliciously decadent brownies only take an hour to make—enjoy!

Olive Oil Brownies

Total Time: 60 min

Serves: 4

Ingredients:

  • 120 ml Olive Oil or replace with canola oil

  • 2 tsp. Vanilla Extract

  • 150 grams White Sugar

  • 90 grams Brown Sugar (or use 90 grams more white sugar)

  • 3 large Eggs

  • 40 grams Cocoa Powder

  • 70 grams All-Purpose Flour

  • 75 grams Chocolate Chips

Directions:

  • Preheat the oven to 350 degrees Fahrenheit.

  • Prepare a square baking tin (8 x 8”) with parchment paper.

  • In a mixing bowl, mix oil, vanilla and sugars.

  • In a separate bowl, whisk eggs for 30 seconds, add to the sugar mixture. Into the egg and sugar mixture, add cocoa powder and chocolate. Pour into the pan.

  • Bake for 28-30 minutes. If your pan is wider than 8 x 8”, bake for a few minutes less.

  • Insert a knife into the brownie—if it comes out clean, it’s ready. If not, bake for several more minutes, then try again.

  • Cool down by resting it for 30 minutes, then remove from the pan.
