Olive Oil Brownies
Total Time: 60 min
Serves: 4
Ingredients:
120 ml Olive Oil or replace with canola oil
2 tsp. Vanilla Extract
150 grams White Sugar
90 grams Brown Sugar (or use 90 grams more white sugar)
3 large Eggs
40 grams Cocoa Powder
70 grams All-Purpose Flour
75 grams Chocolate Chips
Directions:
Preheat the oven to 350 degrees Fahrenheit.
Prepare a square baking tin (8 x 8”) with parchment paper.
In a mixing bowl, mix oil, vanilla and sugars.
In a separate bowl, whisk eggs for 30 seconds, add to the sugar mixture. Into the egg and sugar mixture, add cocoa powder and chocolate. Pour into the pan.
Bake for 28-30 minutes. If your pan is wider than 8 x 8”, bake for a few minutes less.
Insert a knife into the brownie—if it comes out clean, it’s ready. If not, bake for several more minutes, then try again.
Cool down by resting it for 30 minutes, then remove from the pan.
